The Reinheitsgebot originally only stated those three ingredients. Back in 1516 they didn’t know about yeast, it took 300 years for that discovery.
So the actual purity law doesn’t include yeast, and it was never ammended to include it. To include yeast in your brewing is to break the Reinheitsgebot. Crazy huh?
